Very much Rías Baixas in its cool, rain-washed profile, opening with green plum, underripe melon, lemon pith, and tart apple, edged by bay leaf, sea spray, and crushed granite. There’s a distinctly Atlantic savor here — briny, herbal, and slightly bitter — with notes of laurel, fennel seed, and damp stone riding above the fruit. The palate is taut and nervy rather than plush, driven by mouthwatering acidity and a saline snap that recalls oyster liquor and citrus rind, finishing dry, stony, and faintly phenolic.
